The Final Stages of Winter Pruning
Pruning the vines , yes that is what happens during December to March in the vineyards in UK, and then we hope for a slow start and no spring frosts.
– Did you know late pruning in some cold UK regions is even used to delay budburst, reducing frost risk—a counterintuitive strategy that works surprisingly well.
– By selectively removing certain shoots, growers can reduce habitats for insects and fungal spores, subtly improving vine health without chemicals.
– In older vineyards, pruning can even rejuvenate weak vines, giving them a new productive life.
– Vines can remember pruning as they have a kind of biological memory: they often respond predictably to pruning patterns, which means years of careful pruning create more uniform grape quality.
– Some winemakers claim they can almost “train” a vine over decades to produce grapes of a certain style just through consistent pruning.

Tasting notes – Patrick Schmitt MW
“A seriously fine English sparkling wine with its characteristic firm, fresh edge, but also plenty of creaminess from the fine bubbles, and depth from the ripe apple and lemon fruit at its core, along with the yeasty, bready flavours from leesx ageing. A crisp acidity dominates the finish, ensuring you will salivate while carrying notes of crushed rocks and salt flakes.”
