The Hallmark conveys the underlying quality credentials for our Classic Method sparkling wines. It epitomises the highest level of craft and quality. Producers of our top sparkling wines produced using the top varieties and to the levels of quality as outlined in the official designation, PDO (Protected Designation of Origin) can bear this Hallmark.

The Hallmark defines these top quality wines. All of which capture the essence of our Classic Method Sparkling Wines:

  • Grapes grown in England & Wales
  • Second fermentation in bottle
  • Aged on lees before release

All Classic Method wines have been produced by the same method that produces Champagne. This involves a long and complex process including of two fermentations then aged on lees before they are released. It is the highest quality method of production of sparkling wine in the world.
